Objectives

The ambition of EVAGRAIN is to design a Decision Support System capable of providing a comprehensive evaluation of the use value of wheat. While primarily focused on bread-making, the system will also address other industrial end-uses. This evaluation will be informed by scientific and technological knowledge of the cereal sector, as well as analytical data supplied by users.

A secondary objective of EVAGRAIN is to explore innovative analytical tests, potentially in real time, to enable more comprehensive and rapid assessments of wheat quality. These tests will integrate additional non-protein components—such as lipids, pentosans, and water—into the decision-making criteria.
