SayFood is a joint research unit created by merging UMR GENIAL and GMPA. SayFood's research focuses on the physical, chemical, and microbiological processes that govern the food and non-food transformation of bioproducts.

Plateau FRECE has developed strong expertise in cereal processing, biscuit, and bread-making technologies. Plateau FRECE is able to characterize flours and dough, especially dough rheological properties (empirical or fundamental methods) and biscuits quality using technological and sensory tools developed in the unit.

Sayfood is involved in WP2 and WP3.
